Sunday Afternoon Yeast-Free Leftovers

A healthy salad with leftover shrimp from last night's dinner is what is on the menu today at my house on this gorgeous Sunday afternoon.

I started off my salad with Organic Girl Baby Spring Mix. http://iloveorganicgirl.com/ I found this spring mix at my neighborhood Publix.  You can find it in many grocery stores in the Orlando area.  Check the locator on their website.



Next, I added half of a Hess avocado, half of a tomato, and 12 pieces of leftover shrimp from last night, cut into thirds.  For dressing, I added 1 teaspoon of olive oil and a squeeze of lemon.  To finish off the salad, I added fresh ground pepper and a sprinkle of sea salt.  Nothing goes better with this salad than a glass of ice water with lemon.



So, here's to a healthy salad that is yeast-free and delicious!

  1. Oh Jeeze, we don't have a Publix near us. I am going to check our Giant Eagle and a few other places to see if they have this. I love Baby Spring Mix. The first place I ever had it was in Las Vegas many moons ago.

  2. Publix has supermarkets in the southeast. Organic Girl has a locator on their website. Maybe a store carries their products in your area.
