Quick Chicken Stirfry

Last night I made a quick chicken stirfry. It was so easy to make! I was able to use the Trader Joe’s cauliflower rice that I wrote about in the blog last week. It is completely yeast free!

Delicious!

Ingredients:

1 tablespoon olive oil
1 teaspoon garlic, minced
1 onion, chopped
1 teaspoon ground ginger
2 tablespoons Tamari, plus more to taste (Note: Tamari is gluten free soy sauce.)
1 bag frozen Trader Joe’s cauliflower rice
1 bag frozen chicken strips
1 head of fresh broccoli, cut in florets
1 bag of fresh snow peas
2 cans water chestnuts

Directions:

Heat olive oil in a wok. Add garlic and onions. Sauté until translucent.  Add frozen cauliflower and chicken. Cook about 3-5 minutes. Add tamari, ginger, broccoli, snow peas, and water chestnuts.  Let simmer until vegetables are cooked.  Serve. Add more tamari to taste.

Like I said, this recipe is quick and easy. The main thing is to time this correctly so the cauliflower rice doesn’t overcook.  The end result is delicious. Perfect for a Sunday evening. Maybe you will have leftovers for Monday’s lunch or dinner!
