Kelly Ripa's Pancakes (Grain-free)

Have you planned your Mother's Day brunch?  These pancakes would be a great addition to your menu.  My sister told me to watch Kelly and Ryan on Wednesday because they were having a cooking segment on making grain-free pancakes.  The pancakes Kelly Ripa made are similar to these pancakes I featured on the blog in February, 2018.  However, Kelly's pancakes have almond butter in them, which adds protein.  You probably have all of the ingredients in your home right now, too!  They are so simple to make and are very tasty!

Ingredients:

  • 3 bananas
  • 2 eggs
  • 1/2 cup almond butter
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • Dash of sea salt
  • Cooking spray or butter
Directions:
  • Combine all ingredients except cooking spray or butter in a blender and blend until smooth.  Heat cooking spray or butter on a skillet over medium heat.  Pour 1/4 cup of pancake mix on the skillet and cook until lightly browned, flip over and cook until other side is lightly browned.
Ready to eat!

The pancakes may be a bit more brown in color than regular pancakes only because of the almond butter.  Serve with butter and a bit of Truvia sugar.  You could even put a bit of maple syrup on them, but just remember it is not on the Candida plan.  I hope you add these pancakes to your Mother's Day brunch.  Enjoy!
