Cucumber, Mango, and Spinach Salad

I have been cooking quite a bit with mangoes this summer.  They are so flavorful and add beautiful color to salads and salsas.  I found this recipe on the 21-Day Vegan app.  The app is free and I highly recommend it to find recipes to incorporate more plant-based meals into your diet.

Ingredients:
  • 1 bunch or bag of fresh spinach
  • 1 mango, peeled and cut into bite-size pieces
  • 1 large cucumber, peeled and sliced
  • 6 green onions, thinly sliced
  • 1/2 cup fresh basil, chopped 
  • 1 lime, juiced
  • 1/2 cup seasoned rice vinegar  (You could leave off the vinegar and dress the salad with olive oil.)
  • 1/8 teaspoon ground black pepper
Directions:
  • Wash and drain spinach, tear into bite-size pieces, if necessary, and put into a large serving bowl.
  • Toss mango, cucumber, green onions, and basil in a medium bowl.  Add lime juice and vinegar and stir to mix.
  • Arrange mango mixture on spinach and sprinkle with black pepper.



Colorful and Delicious!



This is such a refreshing, summer salad.  You could pair this salad with hummus and Simple Mills Sea Salt Almond Flour Crackers.  You could also make a wrap using a Siete wrap and place hummus inside, too.  Any way you decide to eat this salad, it will be delicious!
