Summer Garden Whipped White Bean Dip

Happy Summer!!  Hope everyone had a great 4th of July weekend!  My sister and I had our cousin Christine and her family visiting from the Chicago area.  As kids, our families would get together every July 4th for fireworks. My dad grilled hot dogs and hamburgers.  Later, we watched the fireworks that were set off in the neighborhood park from our driveway.  It was a great 4th of July tradition!!  Great memories!!

Today I am sharing a white bean dip from Jessica Merchant’s How Sweet Eats blog.  It is made with cannellini beans, garden vegetables, and fresh herbs.  It is super simple to whip up, so it would be great for entertaining this summer.

Summer Garden Whipped White Bean Dip

Ingredients:

  • 3 (15-ounce) cans cannellini beans, drained and rinsed
  • 1 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup olive oil, plus extra for drizzling
  • 2 tablespoons ice water
  • 2 tablespoons chopped fresh rosemary, plus extra for garnish
  • 2 tablespoons chopped fresh thyme, plus extra for garnish
  • 2 tablespoons fresh copped chives, plus extra for garnish
  • 2 ears grilled corn cut from cob (I used frozen corn.)
  • 2 scallions, thinly sliced
  • 1 cups cherry tomatoes, halved
  • Basil leaves for garnish
Instructions:
  • Place the beans in a food processor and blend until pureed and creamy.  Add in the garlic powder, salt and pepper, then continue to blend while streaming in the olive oil and ice water.  Spoon the dip into a large bowl and stir in the rosemary, thyme and chives.  Drizzle with a bit of olive oil.
  • Top the dip with layers of the grilled corn, tomatoes, and scallions.  Finish by topping with some basil leaves and extra herbs.  I like to add another sprinkle of salt and pepper along with a drizzle of olive oil.  Serve immediately with pita chips or crackers, raw veggies or baguettes.


Summer Garden Whipped White Bean Dip
I served my white bean dip with Simple Mills Fine Ground Sea Salt Almond Flour Crackers.  They are so delicious!  This bean dip is so flavorful with the fresh herbs and garden vegetables!  With three cans of beans, this recipe makes a generous amount of bean dip.  I just showed a small amount in the photograph.  So, if you are taking it to a party, I would put the bean dip in one container, the garden veggies in another, and then assemble when you arrive.  I hope you enjoy Summer Garden Whipped White Bean Dip!
