My Take on Rae Drummond’s Million Dollar Dip

If you need a great dip for New Year’s Eve, New Year’s Day or to watch upcoming bowl games, look no further!  This is an outstanding dip!  I made it with all vegan cheeses, so it is non-dairy.

Million Dollar Dip—Makes 8-10 servings
Active Time:  15 min.
Total time:  4 hours 15 min. (includes chilling time)

Ingredients:
  • 1/2 cup slivered almonds 
  • One 8-ounce package cream cheese at room temperature (I used Violife 100% Vegan Cream Cheese.)
  • 1 cup freshly grated sharp Cheddar (I used Daiya Cheddar shreds.)
  • 1 cup freshly grated Swiss (I used Daiya Mozzarella shreds.)
  • 1/4 cup blue cheese crumbles (I used goat cheese crumbles.)
  • 8 slices regular-cut bacon, fried crisp and chopped fine (I used Greenfield Natural Meat Bacon.  It is pork raised with no antibiotics or growth hormones.)
  • 4 green onions
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon ground black pepper 
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon cayenne 
  • Gluten-free crackers for serving
Directions:
  • Place the almonds in a dry, small skillet over medium-low heat.  Toast them until golden brown, shaking the pan, 5 to 7 minutes. Remove from the pan, set aside and cool to room temperature.
  • Add the cream cheese and mayonnaise to a large bowl and stir until smooth. Add the three types of cheeses and stir again until well combined. Add the bacon, toasted almonds slivers, 3/4 of the sliced green onions, salt, pepper, garlic powder and cayenne. Stir together with a rubber spatula until evenly combined.
  • Transfer to a serving dish, cover with plastic wrap and chill for at least four hours.
  • Garnish with the remaining green onions and serve with gluten-free crackers.
