No Bake Breakfast Cookies


Ok, so most of you are at home.  Plus your children are home.  So what could be an easier breakfast than these healthy no bake breakfast cookies?  They could also be a great late-afternoon snack.  And, when life gets more normal, they are a super grab-and -go breakfast!  I think that you will have most of the items in your pantry, too!

No Bake Breakfast Cookies—Makes 15 cookies in 15 minutes!

Ingredients:
  • 1 ripe banana
  • 1/4 cup almond butter
  • 1 tablespoon maple syrup (I used the maple syrup.)
  • 2 cups rolled oats (The old-fashioned kind, not quick oats)
  • 1 tablespoon coconut sugar
  • 1 tablespoon flour of choice (I used a gluten-free flour)
  • 1 tablespoon Chia seeds
  • 1 tablespoon pepitas
Instructions:
  1. Mash banana in a bowl with a fork; add maple syrup and almond butter.
  2. Next, add the dry ingredients—oats, sugar, flour, Chia seeds, and pepitas—and stir to combine. The dough should be thick enough to be able to roll into balls.
  3. Use your hands to roll the cookies into balls, then use your hand or the back of a spoon to smash them down forming cookies. Repeat this process until the dough is gone.
  4. Store the cookies in the refrigerator and consume within four days.



Oh, so delicious!!

If you want to make the recipe gluten-free, just use gluten-free old-fashioned (rolled) oats.  You may want to put the cookies in the refrigerator a bit to set them.  It changes the time to make the recipe longer than 15 minutes, but I liked eating them after they had been in the refrigerator.  You can also use different add-ins!  Use whatever you have available at home.  Suggestions are hemp seeds, mini chocolate chips, dried cranberries, sunflower seeds, or sliced almonds.  Dig in that pantry!!  I hope you and your family enjoy these no bake breakfast cookies.
