Cajun Chicken Fajita Pasta

Today’s recipe is again from the Instagram page, A Life From Scratch.  Cajun Chicken Fajita Pasta is a one-pot pasta that is great meal for a family.  I’m sure you will have leftovers, depending upon your family’s size.  It has a little kick of spice, too!!

Cajun Chicken Fajita Pasta

Ingredients:

  • 1 pound (or so) chicken tenders, cut into bite-sized pieces 
  • 3 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced 
  • 1 onion, sliced 
  • Salt & pepper 
  • 1 tablespoon Cajun seasoning 
  • 1 tablespoon chili powder 
  • 1 tablespoon cumin 
  • 1 tablespoon garlic powder
  • 2 cups cream (I used heavy whipping cream, because I could not find the dairy-free version.)
  • 3 cups chicken stock 
  • 1 pound of dry pasta (I used Barilla chickpea pasta.)
  • 1 cup shredded pepper jack cheese (Follow Your Heart has many dairy-free options.)
  • Fresh cilantro or parsley, chopped, for topping (I didn’t have this.)
Directions:
  1. In a large, deep sided pan, heat the olive oil.  Cook the chicken over medium heat until done, about 5 minutes or so. Remove.
  2. Add in veggies and sauté until the onion is translucent, roughly 5 minutes.  Add the chicken back into the pan along with all of the spices. Mix together well.
  3. Pour in the cream, stock, and pasta.  Stir well.  Let bubble together until the pasta is cooked and the sauce is thickened.  (Keep an eye on it - stirring when you can.)  This will take about 20 minutes over low heat.
  4. Stir in cheese.
  5. Top with cilantro or parsley. (if available)
