Recipe Repeat—Bacon Roasted Carrots

I have another delicious spring recipe on the blog today.  Bacon roasted carrots are a beautiful side dish to complement any meal, such as roast chicken, a roast beef, and a pork tenderloin.  I adapted this recipe from the How Sweet Eats blog by Jessica Merchant.

Bacon Roasted Carrots--Serves 2-4 people

Ingredients:

  • 3 slices thick-cut bacon, chopped (Note: Bacon is not on the Candida plan, but I did use it for the recipe.)
  • 2 pounds of carrots, peeled
  • Pinch of salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons chopped fresh parsley
Directions:
  • Preheat over to 400° F.  Line a baking sheet with parchment paper.
  • Heat a skillet over medium heat and add the chopped bacon.  Cook, stirring often, just until the fat is rendered and the bacon starts to crisp up.  Turn off the heat.  (Note:  I did not cook my bacon in a skillet.)
  • Peel the carrots and place them on the baking sheet.  Drizzle the carrots with the bacon grease that is in the pan.  Toss the carrots to cover them evenly with the bacon fat.  Sprinkle a pinch of salt on the carrots, along with the pepper and garlic.  Top with the bacon. (Note:  I peeled the carrots and placed them on the baking sheet.  Then I added 1-2 tablespoons of olive oil on the carrots.  I sprinkled the pinch of salt on the carrots, along with the pepper and garlic.  Then I tossed the carrots to cover them evenly with the olive oil and spices.  Next, I scattered the chopped bacon over the carrots on the baking sheet.)
  • Roast the carrots for 20 minutes, or until the bacon is crisped and the carrots are fork tender.
  • Remove the baking sheet and sprinkle with fresh parsley.  Serve immediately.
Ready to eat from the carrot patch!

As you can see, I used traditional orange carrots.  Right now there are many varieties of carrots in the stores in all types of colors.  I bought organic carrots with the long green stems attached.  They were so fresh and delicious!  Roasting brings the sweetness out of the carrots.  Again, bacon adds extra flavor, but it is not needed if you are following the Candida diet 100% at this time.  Enjoy!
