Slow Cooker Cilantro Lime Chicken

Not sure what you are making for your Labor Day Weekend festivities?  Try Slow Cooker Cilantro Lime Chicken! This slow cooker recipe is easy to make and so versatile!  The chicken can be served over rice, served over lettuce for a salad, or even put in tortillas for tacos.

Slow Cooker Cilantro Lime Chicken

Ingredients:
  • 3 boneless skinless chicken breasts
  • 1-15 ounce can tomato sauce
  • Splash of chicken stock (or broth)
  • 1 bunch of cilantro, rough chop
  • 1 whole lime, zest and juice
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon garlic salt
  • A shake or two of red pepper flakes
  • Salt and Pepper
  • Rice, tortilla shells, or lettuce
  • Topping Ideas: chopped tomatoes, avocado, chopped onion, more cilantro, Mexican cheese (or dairy-free/vegan Follow Your Heart Fiesta Blend Shreds), sour cream (or fat free plain Greek yogurt), tortilla strips or chips
Directions:
  1. Place everything in your slow cooker and cook on high for 3 hours or low for 6 hours.
  2. Shred the chicken and serve over rice, lettuce or in tortillas.

See what I mean?  Simple and delicious. I served my chicken over Seeds of Change Organic Brown Basmati Rice and topped it with avocado, onions, cheese, tortilla strips and Greek yogurt.  It is so full of flavor!  This chicken would also be perfect in a sandwich with your choice of toppings.  So add this to your Labor Day menu this weekend.  It will be a hit!
