Vegetarian Casserole (Meatless Meatloaf)

Ok, you have to trust me with this recipe!!  Everyone who eats it, loves it.  It doesn’t taste like you think it will at all.  I got this recipe from Lisa Robertson, business owner and former QVC host. Growing up, her mother made this casserole all of the time. Again, do not let the ingredients steer you away from this recipe. Somehow the combination of the ingredients just works!

Vegetarian Casserole (Meatless Meatloaf)—Serves 8

Ingredients:

  • 1/2 cup Paluga butter, melted
  • 5 eggs
  • 24-ounces small curd 4% milk fat, cottage cheese
  • 1/2 cup pecans, chopped
  • 1 white onion, finely diced
  • G. Washington Broth, 2 packets Rich Brown, 1 packet Golden (See paragraph below.)
  • 7 ounces Original Special K, crushed small
Directions:
  1. Preheat oven at 350°.
  2. In a large mixing bowl, combine all ingredients.
  3. Place in a 9” x 13” greased casserole dish and cover with aluminum foil.
  4. Bake for 45 minutes.
  5. Remove aluminum foil and bake 15 minutes more. (Note: You can leave it in a little longer, so it gets a nice brown finish.)

As you can see, this recipe is packed with protein.  I watched Lisa’s video of the recipe, and she is specific about using Paluga butter (she loves the flavor) and definitely use 4% small curd cottage cheese. Less than 4% will not work for the taste of this recipe. In addition, it is imperative that you use G. Washington broth packets, 2 brown and 1 golden for the recipe. My local store doesn’t carry it, but you can find it on Amazon. My sister has made it with other broth packets and it is just not as tasty.  The Original Special K adds a special texture to the recipe.

So my question was where did this recipe originate?  I did a little Internet sleuthing and it seems to have originated in the world of the Seventh-Day Adventists. It was often served at church potlucks, at holidays and for dinner guests.  

I used the casserole as a main dish and served it with steamed fresh green beans. It could also be served with mashed potatoes or a cauliflower mash.  Roasted acorn squash, with fall approaching, would be another delicious choice.
