Crab Topped Salmon with Parmesan Roasted Broccoli

When I saw this recipe for Crab Topped Salmon come across Jessica Merchant’s How Sweet Eats blog, I knew I would be making it for New Year’s!! So this is what I made on New Year’s Day, along with her Parmesan Roasted Broccoli.

Crab Topped Salmon
Yield: 4 to 6 people
Prep Time: 25 minutes 
Cook Time: 25 minutes
Total Time: 50 minutes 

Ingredients:
  • 2 pounds salmon
  • 6 tablespoons melted butter
  • 1 pound lump crabmeat, drained
  • 1 large egg, lightly beaten
  • 1/3 cup breadcrumbs 
  • 1/4 cup mayo
  • 3 tablespoons chopped fresh parsley, plus more for topping
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly cracked pepper 
  • 1/2 teaspoon garlic powder 
  • 1/4 teaspoon smoked paprika 
  • Parmesan roasted broccoli, for serving 
Instructions:
  1. Preheat the oven to 400°F. Sprinkle the salmon with salt and pepper.
  2. Melt 2 tablespoons of butter and place on the bottom of a 9x13 (or oval) baking dish. 
  3. Place of salmon in the dish, on top of the melted butter.
  4. In a bowl, combine the lump crab meat with the egg, the breadcrumbs, mayo, parsley, Dijon, salt, pepper, garlic powder and paprika. Add in the rest of the melted butter. Stir until everything is moistened and the mixture comes together, almost like crab cakes.
  5. Scoop the crabmeat right on top of the salmon - divide it evenly between pieces. There will be a lot of crab on top! This is good - it’s a healthy, indulgent dish.
  6. Bake the salmon at 400° for 20 to 25 minutes, until the crab meat is golden and the salmon is opaque and flakes with a fork.
  7. Remove it from the oven and sprinkle with extra fresh parsley. Serve with Parmesan roasted broccoli.
Parmesan Roasted Broccoli
Yield: 2 generous servings
Prep Time: 5 minutes 
Cook Time: 20 minutes 
Total Time: 25 minutes 

Ingredients:
  • 2 heads broccoli, cut into florets
  • 2 tablespoons olive oil 
  • 1/4 cup raw, unsalted pine nuts
  • 1/2 teaspoon salt 
  • 1/2 teaspoon pepper 
  • 2 to 3 tablespoons freshly grated Parmesan cheese 
Instructions:
  1. Preheat the oven to 425°F. Line a baking sheet with foil and spray with nonstick spray.
  2. Place the broccoli on the sheet and drizzle with the olive oil. Cover with the pine nuts, salt, pepper and Parmesan.
  3. Roast for 20 to 25 minutes, or until the broccoli is golden brown and the pine nuts are toasted. After this time, the pine nuts may start to burn, so keep an eye on it. Remove from the oven and sprinkle with more Parmesan, if desired. Serve immediately.

This is a delicious meal. It is indulgent and rich. I made half of the salmon recipe. It was plenty for two people. I also made half of the Parmesan Roasted Broccoli. Be sure to cook the salmon the full 25 minutes. Then I would put the dish under the broiler for maybe a minute or two to be sure the crab is golden on top.

This is such a delicious dinner! It is perfect for a holiday, birthday, or any type of celebration! It would also be great to have it as a splurge on a weeknight, too! I hope you will try Crab Topped Salmon and Parmesan Roasted Broccoli. Enjoy!!
