Amaretto Brownies for Your Valentine!

Amaretto Brownies  from Jessica Merchant’s How Sweet Eats blog are a delicious treat to make for your Valentine this year (or for yourself!) I think if you make these brownies for your Valentine, they just may be your Valentine forever!

Amaretto Brownies 

Ingredients:

  • 1 cup unsalted butter cut into pieces
  • 6 ounces semi-sweet chocolate chopped
  • 2 cups sugar
  • 3 large eggs lightly beaten 
  • 2 tablespoons amaretto liqueur 
  • 1 teaspoon vanilla extract 
  • 1/2 teaspoon almond extract 
  • 1-1/2 cups all-purpose flour (I used King Arthur’s gluten-free flour)
  • 1 teaspoon instant expresso powder
  • 1/2 teaspoon salt
Ideas for Serving:
  • Vanilla ice cream
  • Honey roasted sliced almonds (Jessica loves the Trader Joe’s brand or just toast some almonds)
  • I topped mine with Swerve powdered sugar.
  • Sprinkles 
  • Melted chocolate 

Instructions:

  1. Preheat the oven to 400°F. Lightly spray your pan with baking spray or nonstick spray.
  2. In a large bowl, melt the butter and the chopped chocolate. I did this in the microwave in 30 second increments, stirring after each time until melted.
  3. Once melted, whisk the sugar into the brownies. Let the mixture cool for five minutes. Whisk in the eggs one at a time. Whisk in the amaretto, vanilla and almond extract. Stir in the flour, espresso powder and salt. Mix until the batter comes together. Pour the batter in a 9x13-inch pan. 
  4. Bake the brownies for 18 to 20 minutes, or until the center is just set. Remove the brownies and let cool slightly. If you make them in a skillet or want to serve them right in the dish, serve within 10 to 15 minutes and top with ice cream, sprinkles, toasted almonds and melted chocolate.

Note: Jessica made her brownies in a 1-quart heart pan and had enough batter leftover to make an 8x8-inch square pan of brownies, too!



As you can gather, I made my brownies in a 9x13-inch pan. I let them cool for quite a while. Then I used cookie cutters to make them festive for Valentine’s Day! The top row of cookie cutters I purchased at Joann Fabrics and Crafts. The “LOVE” cookie cutters were purchased at Walmart.

As for the taste of these brownies—let me just say they are now my favorite brownie. My sister said the same thing! The almond extract and amaretto make this brownie “over the top”! They are chewy, not cake-like. You just have to make them!! Have a Happy Valentine’s Day!!
