Bacon Wrapped Shrimp from “In the Kitchen with Paul and Judy”

Here is a fantastic appetizer for Super Bowl Sunday! My sister, Glenna, actually made this recipe. So, thanks, Glenna! We got the recipe for Bacon Wrapped Shrimp from In the Kitchen with Paul and Judy. They are the cutest couple! I enjoy watching them cook together, and I think you would, too!

Bacon Wrapped Shrimp

Ingredients:
  • 8 slices of bacon, halved
  • 16 large raw shrimp, peeled except for the tail, deveined (We used jumbo shrimp because the other shrimp they had were too teeny tiny.)
  • 1 tablespoon olive oil
  • Salt & pepper
Directions:
  1. Preheat oven to 425°F.
  2. Arrange bacon slices, leaving space around each, on an oven-safe rack placed on a baking sheet. Bake for 8-10 minutes, depending on the thickness of your bacon. It should still be pliable when you remove it from the oven.
  3. Meanwhile, place shrimp in a medium bowl. Add olive oil, salt and pepper. Coat the shrimp thoroughly.
  4. When partially cooked bacon slices are cool enough to handle (about 5 minutes after you remove from oven), wrap each slice of bacon around one raw shrimp, securing with a toothpick. Return to baking sheet. Repeat with remaining shrimp.
  5. Bake for 10 to 15 more minutes until shrimp are pink and bacon is cooked through.
This shrimp is really delicious! The shrimp you purchase should be large enough to wrap bacon around it easily. Pair this with a beer (gluten-free) and you have a super snack for a super game!! I’m sure Paul and Judy, since they live in Tampa, are with me on this—Go Bucs!
