Asparagus Salad Supreme

Asparagus Salad Supreme is the perfect spring salad. My sister made it for us on Easter Sunday this year. It only takes 20 minutes to make! This recipe is from this year’s Publix Easter Delights flyer and was developed by Publix Aprons.

Asparagus Salad Supreme 

Total Time: 20 minutes    Makes 6 servings

Ingredients:

  • 1 pound fresh asparagus 
  • 1 shallot 
  • 2 hard-boiled eggs
  • 1/4 cup cooked bacon pieces
  • 2 tablespoons capers 
  • 1/3 cup diced fresh tomato
  • 3 tablespoons Ceasar dressing (We used Bolthouse Creamy Ceasar Yogurt Dressing.)
  • 3 tablespoons grated Parmesan cheese

Instructions:

  1. Remove root ends from asparagus. Place in microwave-safe dish and even layer; microwave on high 2 to 3 minutes or until tender. Chill for 10 minutes (asparagus can be served warm).
  2. Finely chop shallot; peel and grate eggs. Place asparagus in a row on serving platter. Create individual rows down the center of the asparagus with shallots, eggs, bacon, capers, and tomatoes. Drizzle with dressing and sprinkle with cheese. Serve.



Isn’t this a beautiful salad? And, it is delicious! Cooking the asparagus in the microwave is a game changer. Who knew? I usually roast asparagus. We also had crab cakes from Publix to complement our Easter lunch/brunch. I highly recommend this salad.
