Bang Bang Salmon Burgers from Everyday Dinners by Jessica Merchant

The Bang Bang Salmon Burgers from Jessica Merchant’s new cookbook Everyday Dinners are the bomb! No joke! The key is using fresh salmon. To be honest, I have always used canned salmon for my salmon burgers. But using fresh salmon is a game changer! I also love the addition of panko breadcrumbs on the outside of the burgers. 

The Napa Slaw that accompanies the burger is also amazing. It is a non-mayonnaise slaw, which is becoming my favorite way to eat any type of coleslaw. It contains a sliced red bell pepper, red onion, and a jalapeño. The Bang Bang Sauce only contains three ingredients.

This recipe is easy to prep ahead, too. I sliced the red bell pepper, red onion, and jalapeño and stored them in a plastic bag in the refrigerator. I made the Bang Bang Sauce ahead of time, too. Jessica suggests that you can make the salmon burgers ahead of time and store them in the refrigerator until you are ready to cook them.

Below are the photos. I realized that you can’t see too much of the finished salmon burger in the first photo, but in the second photo you can see how they looked before they went into the oven! I also paired the meal with French fries (frozen from the freezer section for time’s sake), topped with the Bang Bang Sauce. So delicious!
