Chipotle, Bacon, Blue Cheese Brussels Sprouts from Everyday Dinners!

I’m so excited to share my first recipe from Everyday Dinners, Jessica Merchant’s new cookbook! Chipotle, Bacon, Blue Cheese Brussels Sprouts are phenomenal. I love the combination of the blue cheese and bacon with the Brussels sprouts. Plus, the chipotle chili powder gives it a kick! This is definitely a restaurant-quality side dish!

Chipotle, Bacon, Blue Cheese Brussels Sprouts 
Servings: 2 to 4
Time: 30 minutes

Ingredients:
  • 8 slices thick-cut bacon, chopped
  • 1 pound Brussels sprouts, stems removed and quartered
  • 1 tablespoon extra-virgin olive oil 
  • 1 tablespoon brown sugar (you may substitute 1 tablespoon Brown Swerve) 
  • 1 teaspoon ground chipotle chili powder
  • 1/2 teaspoon freshly cracked black pepper 
  • 1/2 teaspoon garlic powder 
  • 1/2 cup crumbled blue cheese (not on yeast-free plan; you could substitute crumbled goat cheese or a vegan Parmesan, such as Follow Your Heart)
Instructions:
  1. Preheat the oven to 425°F.
  2. Heat a skillet over medium heat and add the bacon. Cook until some of the fat has rendered, but the bacon is not yet crispy.
  3. Place the Brussels sprouts in a bowl. Drizzle the bacon and any fat in the skillet over the sprouts. Add the olive oil. Stir together the brown sugar, chipotle powder, pepper, and garlic powder. Sprinkle it over the sprouts and toss until everything is combined.
  4. Spread the sprouts and bacon mixture out on a baking sheet. Roast for 15 to 20 minutes, tossing once or twice. Remove from the oven and cover with blue cheese. Let sit for five minutes before serving.


As you can see, this recipe is easy to follow and looks and tastes delicious! Jessica also includes a 10-minute meal prep for this recipe. I trimmed and chopped the Brussels sprouts in the early afternoon and placed them in a plastic bag in the fridge. I also measured out all of the spices and placed them in a storage container, as suggested. So all I had left to do was chop the bacon and fry it for a bit, stir all of the ingredients together, and bake. This technique is so great for working adults or even non-working adults like me! It makes cooking virtually stress-free in the evening.
