Mango Avocado Shrimp Salsa—Perfect for Cinco de Mayo

How Sweet Eats  blog is the perfect recipe for Cinco de Mayo! It can be served as an appetizer, placed over butter lettuce as a salad or in a fajita or taco. Pair it with homemade chips and a margarita and you have the perfect Cinco de Mayo Happy Hour at home!

Mango Avocado Shrimp Salsa 
Yield: 6-8 People 
Prep Time: 30 minutes 
Total Time: 30 minutes 

Ingredients:
  • 16 ounces cooked shrimp, peeled, deveined and chopped 
  • 16 ounces grape or cherry tomatoes, quartered or chopped
  • 2 cups chopped fresh mango, about 2 ripe mangos (you can also thaw frozen mango if you cannot find fresh ones)
  • 2 avocados, chopped
  • 1 to 2 jalapeño peppers, seeded and diced
  • 1/3 cup diced red onion (you can use green onions or chives if you like a milder flavor)
  • 1/3 cup chopped fresh cilantro 
  • 1 garlic clove, minced
  • 2 limes, juiced (about 1/4 cup lime juice, add more/less to your taste)
  • Kosher salt and pepper 
  • Tortilla chips, for serving (See recipe for homemade tortillas chips below.)
Instructions:
  1. Combine the shrimp, tomatoes, mango, jalapeño, avocado and cilantro in a large bowl. Toss with the fresh lime juice and a big pinch of salt and pepper. Stir and taste, adding more salt and pepper if necessary.
  2. You can make this a few hours ahead of time - Just wait to add the avocado until right before serving.
Homemade Baked Tortilla Chips (Adapted from Laura in the Kitchen)
  1. Pre-heat oven to 375°.
  2. Take tortillas of your choice and coat each side with vegetable oil.
  3. Stack tortillas to cut into triangular-chip shapes.
  4. Place on a baking sheet in one layer.
  5. Top with salt.
  6. Bake 8-10 minutes. (Check your oven. I take mine out at 5 minutes.)
This Mango Avocado Shrimp Salsa is just delicious! It tastes so fresh and is perfect for the spring/summer season. The homemade chips are so delicious! Once you start making your own tortilla chips, you won’t buy them anymore. It is a game changer! Jessica suggests making individual servings of the salsa and chips if using as a dip, for sanitary reasons. Each person could have have a mini cup or even a martini glass filled with the salsa!
