Crispy Broccoli Cheddar Melt Chicken

Crispy Broccoli Cheddar Melt Chicken is not only delicious, but is a recipe you can prep in 15 minutes or so. It is baked in one pan which helps with clean-up later. Believe me, there is cheddar chicken under all of that broccoli! I got this recipe from Jessica Merchant’s How Sweet Eats blog.

Crispy Broccoli Cheddar Melt Chicken 
Yield: 4 people
Prep: 15 min.
Cook Time: 25 min.
Total Time: 40 min.

Ingredients:
  • 4 boneless skinless chicken breasts (thin-sliced breasts work best)
  • Kosher salt and pepper
  • Garlic powder
  • 2 eggs, lightly beaten
  • 1-1/2 cups seasoned breadcrumbs (Jessica uses a mix of fine and panko.)
  • 4 cups of broccoli florets
  • 1 tablespoon olive oil
  • 6 ounces grated sharp cheddar cheese
Instructions:
  1. Preheat oven to 400°F. Spray a 9x13 inch pan with nonstick spray.
  2. Season the chicken breast all over with garlic powder, salt and pepper. Place the eggs in one bowl and the breadcrumbs in another bowl. Dip each piece of chicken in the egg and then in the breadcrumbs, pressing gently so they adhere to the chicken. Place each chicken breast in the baking dish - do not overlap them!
  3. Once the chicken is in the dish, place it in the oven. Bake it for 10 to 12 minutes.
  4. While the chicken is baking, place the broccoli in a glass bowl. Drizzle with 2 tablespoons of water. Microwave the broccoli for two minutes. This helps to steam the broccoli so it can cook quicker in the oven.
  5. Drain the broccoli and drizzle it with the olive oil, then sprinkle with salt, pepper and garlic powder.
  6. Remove the dish from the oven. Gently flip the chicken. Top with 3/4 of the cheese. Add the broccoli on top. Sprinkle on the remaining cheese.
  7. Bake another 10 to 12 minutes, or until the internal temperature of the chicken is 165°F.
  8. Remove the chicken from the oven. Slice and serve!
As I stated, Crispy Broccoli Cheddar Melt Chicken is easy to make. To cut down on the prep time, I bought fresh pre-cut broccoli florets in a microwave bag. I microwaved the broccoli for 2 minutes and then added it to the chicken per instructions. This made a delicious and healthy dinner as I served it with brown rice. I’m definitely going to make this recipe again! Enjoy!
