Lightened Shepherd’s Pie

Shepherd’s Pie with Ground Turkey is a recipe I made from WW (formerly Weight Watchers.) It is basically a lightened version of the classic recipe. While I can’t link the actual recipe (see note below), I can tell you that you can take any basic shepherd’s pie recipe and do these things to achieve a lightened version:

  1. Substitute ground turkey for ground beef or lamb
  2. When making the mashed potatoes, substitute light sour cream for half and half/cream.
These simple substitutions really help with the calories, but the flavor is still there because of the rosemary, thyme, chicken broth and tomato paste. This is an easy dish to prep ahead of time, too. I chopped all of the carrots, celery and onion in the morning and placed them in the fridge in a plastic bag until I was ready to make the rest of the recipe. The whole recipe can be made ahead of time and stored in your fridge until you are ready to bake. You just may have to increase the baking time a bit.

I’m not going to wait anymore for St. Patrick’s Day to have Shepherd’s Pie with Ground Turkey. It is really delicious and great for the transitional weather many are experiencing now.
