Spring Couscous Bowls with Lemon Feta Vinaigrette from How Sweet Eats

This salad has all of the flavors of spring! With couscous, roasted asparagus, fresh herbs and pistachios, how could one go wrong? I made the salad last week, and I’m going to make it again this week. The recipe calls for couscous, but you could substitute any grain you have on hand, such as brown rice or quinoa. The lemon feta vinaigrette is so flavorful! The recipe will serve 2-4 people, and the total preparation time is 40 minutes. This includes roasting the asparagus for 15 minutes.
