Smashed Potatoes

I have always wanted to make smashed potatoes. So, I finally did. It is basically a two-step cooking process, and the result is amazingly delicious! It is also a fun dish to make.

Smashed Potatoes

Ingredients:
  • Small potatoes (my bag had 11 potatoes)
  • Salt
  • Pepper
  • Garlic powder
  • Olive oil
  • Melted butter (amount depends on how many potatoes you have)
  • Parsley (fresh or dried) as a garnish
Directions:
  1. Preheat oven to 450°F.
  2. Boil potatoes in salted water (roughly 1 tablespoon of salt) for 15-20 minutes or until they are fork-tender.
  3. Drain the potatoes in a colander for five minutes.
  4. Prepare a baking sheet with olive oil. Place the potatoes on the baking sheet and smash them with the bottom of a glass until they are flattened. Try not to break the potato into pieces.
  5. Let the potatoes sit for five minutes.
  6. Drizzle the potatoes with melted butter and then olive oil. (You can only use olive oil, if you wish.)
  7. Season the potatoes with salt, pepper and garlic powder. 
  8. Bake in oven for 25-30 minutes, or until they are golden brown. (Do not flip the potatoes.)
  9. Garnish with parsley and serve.

These smashed potatoes are delicious! I served mine with fat free Greek yogurt. There are many variations on smashed potatoes and dipping sauces, too. They are a terrific side dish. I hope you will try them! Enjoy!
