Slow Cooker Toasty Buffalo Chicken Sandwiches

Yesterday I made Slow Cooker Toasty Buffalo Chicken Sandwiches from A Life From Scratch. This is such a simple and tasty mid-week or weekend dinner that takes very little prep time. 

Basically, you begin with 4 chicken breasts placed in a slow cooker. Add one bottle of your favorite Buffalo sauce. I used Sweet Baby Ray’s Buffalo Wing sauce, which was recommended by Courtney of A Life From Scratch. Then you add one envelope of Hidden Valley Original Ranch Seasoning. Then mix those things together a bit and cook on low for 5 hours.

Before the 5 hours are up, you can cover a baking sheet with aluminum foil. When the chicken is ready, preheat your oven to 425° and shred the chicken right away. Next place the buns (I used King Hawaiian Sliders) on the baking sheet and place the shredded chicken on the buns. Next top with a generous portion of mozzarella cheese. Place in the oven for 5 minutes and serve! (The complete recipe is below in the screenshot.)

I served the sandwiches with Publix sweet coleslaw. Also, if the buffalo sauce is a little spicy for you, add a dollop of fat free plain yogurt on your sandwich to cut the heat.
