Baked Chicken Taquitos with Avocado Salsa from A Life From Scratch

 

This year for Cinco de Mayo I made Baked Chicken Taquitos with Avocado Salsa from A Life From Scratch. They are super delicious and are simple to make. The recipe uses shredded rotisserie chicken, spices you probably already have in your pantry and tortillas. The avocado salsa has only a few ingredients, too.

I used flour tortillas as well as corn, but I really enjoyed the corn tortillas the most. I also used a homemade salsa recipe instead of store-bought. (Click on link.) You can easily double this recipe (I did) to use the entire rotisserie chicken. I would definitely make the taquitos again!

BAKED CHICKEN TAQUITOS WITH AVOCADO SALSA 


2 cups rotisserie chicken, shredded

1/2 tsp cumin

1/2 tsp chili powder

1/2 tsp garlic powder

1/4 tsp paprika

1/2 tsp salt

1 cup cheese, whatever kind you'd like

1/2 cup or so of your favorite salsa

2 TBS fresh lime juice

12 corn tortillas

olive oil or avocado oil cooking spray

2 avocados, chunked up

1/4 red onion, minced

1/2 jalapeño, minced handful cilantro, chopped salt & pepper fresh lime juice


Preheat your oven to 425. Mix the chicken with the spices, cheese, salsa and lime juice in a bowl.

Warm the tortillas in a microwave two at a time between a damp paper towel to help them roll easier. Put some chicken mixture on one side of the softened tortilla, roll, and place seam side down on a baking tray. Repeat with remaining tortillas. Spray generously with cooking spray and bake at 15-20 minutes until nicely browned and crisp.

For the avocado salsa, combine remaining ingredients. Spoon over the warm taquitos and serve. Enjoy!
