A healthy salad with leftover shrimp from last night's dinner is what is on the menu today at my house on this gorgeous Sunday afternoon.

Next, I added half of a Hess avocado, half of a tomato, and 12 pieces of leftover shrimp from last night, cut into thirds. For dressing, I added 1 teaspoon of olive oil and a squeeze of lemon. To finish off the salad, I added fresh ground pepper and a sprinkle of sea salt. Nothing goes better with this salad than a glass of ice water with lemon.
So, here's to a healthy salad that is yeast-free and delicious!

Oh Jeeze, we don't have a Publix near us. I am going to check our Giant Eagle and a few other places to see if they have this. I love Baby Spring Mix. The first place I ever had it was in Las Vegas many moons ago.
