Do you have some peaches in the refrigerator that you need to use before summertime truly leaves us? If so, I have the recipe for you! It is on page 7 of The Pretty Dish cookbook by Jessica Merchant. Tropical Peach Overnight Oats is another scrumptious combination of the flavors of summer, especially if you have recently returned from a cruise or island vacation. My yeast free modifications are in parentheses after the ingredient.
Ingredients: (Makes two servings, but can be multiplied)
Instructions:
The night before, in a bowl, stir together the oats, milk, 1/2 tablespoon of Truvia Nectar, the chia seeds, 1 tablespoon of the coconut, and the coconut extract until combined. Place it in the refrigerator and let it sit overnight.
The next morning, fill 2 glasses with some of the bananas. Add the oats on top of the bananas. Top the oats with the remainder of the bananas and the peach. Drizzle with the remaining 1/2 tablespoon of Truvia Nectar, and sprinkle on the remaining 2 tablespoons of coconut. Serve immediately.
This recipe will remind you of the tropics! It is delicious! I hope you try it while peaches are still in season.
