French Salmon Salad by Kelly Leveque

This recipe for French Salmon Salad comes from by Kelly Leveque's blog.  It is so healthy and filling.  Ms. Leveque's premise is to have protein, fat, fiber, and greens (The Fab Four) at each meal to curb hunger and the need for snacking.  This lengthens the blood sugar curve and ensures proper nutrients throughout the day.  Here is the recipe:

French Salmon Salad--Makes 1 or 2 servings

Ingredients:
  • 1 (6-ounce) can wild salmon, drained
  • 1 tablespoon Primal Kitchen mayonnaise
  • 1 tablespoon whole-grain Dijon mustard
  • 4 tablespoons olive oil
  • 1 tablespoon capers
  • 1 tablespoon chopped shallot
  • 1 tablespoon chopped fresh dill
  • 1 bag organic salad greens
  • 1 tablespoon champagne vinegar
  • Pink Himalayan salt and freshly ground black pepper 
Directions:
  1. In a medium bowl, break up the salmon with a fork.  Add the mayo, mustard, 1 tablespoon of the oil, the capers, shallot, dill and mix carefully.
  2. In a salad bowl, whisk together the vinegar and remaining 3 tablespoons oil until emulsified.  Season with salt and pepper.  Add the salad greens and toss to coat in the dressing.
  3. Divide the greens between plates and top with the salmon salad. 





The greens I used were a mixture of baby spinach and kale.  I did use the champagne vinegar, but that could easily be left out of the dressing.  I would think that olive oil, a squeeze of lemon with salt and pepper would suffice.  You could easily use a 14.75 ounce can of wild salmon and double the recipe for more servings.  I loved this salmon salad and I would make it again.  It was filling, and I was not hungry until dinner.  Enjoy!
