Protein Power Balls!

If you are looking for a delicious and healthy snack, look no further than these Protein Power Balls.  I saw this recipe featured on the Hallmark Home& Family show a week ago and thought I would make them.  I’m always looking for a healthy snack!

Protein Power Balls

Ingredients:
  • 10 medjool dates, pitted (approximately 7 ounces)
  • 1/4 cup MCT oil
  • 1 cup almond butter
  • 1 cup gluten-free oats
  • 1/2 cup shredded unsweetened coconut
  • 2 teaspoons cinnamon
  • 1/2 teaspoon Kosher salt
Directions:
  1. Pulse dates in food processor until almost smooth, adding MCT oil to help blend.
  2. Add the remaining ingredients and pulse until a rough “dough” forms.
  3. Scoop dough into small balls. (Approximately 2 tablespoons apiece)
  4. Store in refrigerator until ready to eat.

As you can see, the Protein Power Balls are simple to make.  I recently bought MCT oil to add to my morning smoothies, so I had that on hand.  (If you do add MCT oil to a smoothie, it is recommended to start with a small amount, such as a teaspoon.)  I have eaten the Protein Power Balls a few times this week to curb hunger pains between appointments.  They work!!  I hope you will try this delicious snack!
