I started following A Life From Scratch Instagram page recently. Run by Chicago suburb mom, Courtney Holsworth, she always has easy-to-make delicious recipes, a positive attitude, and lots of tips. She is personable in her stories, and you feel like you are talking to a friend. She recently had a baby daughter, so if you are a new mom, she would be very helpful for setting up home routines.
I made Cortney’s Quarantine Pasta a few nights ago. Appropriately named for the season of life we are in, the pasta uses many pantry staples and food items that are accessible.
Quarantine Pasta
Ingredients:
- 1 pound pasta, whatever kind you’d like (I used Barilla Chickpea Rotini. It was so good!)
- 1 pound Italian sausage, (can use chicken) (Note: I used Publix Greenwise Chicken Mild Italian Sausage, but you could also used grilled chicken or shredded rotisserie chicken.)
- Olive Oil
- 2 cups heavy whipping cream (You could use Silk Dairy-Free Heavy Whipping Cream Alternative as a substitute.)
- 1 cup chicken stock
- 1 cup grated Parmesan, plus more for topping (You could use Follow Your Heart Parmesan.)
- 2 teaspoons garlic powder
- 1/2 teaspoon red pepper flakes
- 1 teaspoon Italian seasoning
- 2 cups freshly chopped spinach
- 1 cup frozen peas
- Fresh basil (optional for topping)
Instructions:
- Cook your pasta according to package directions.
- In a large deep sided pan, brown your sausage with a little olive oil. Set aside.
- In the same pan combine the cream, stock, Parmesan, and seasonings. Let bubble away until thickened, about 10 minutes.
- Add in spinach, peas, and cooked sausage. Stir together and let spinach wilt. Mix sauce with cooked pasta. Top with more Parmesan and fresh basil, if you have it—if not all good!
