Spinach Walnut Pasta

This is a pasta dish that you can have weekly that is healthy and simple to make.  I got this recipe from an episode of In the Kitchen with Paul and Judy.  My sister, Glenna, and I have been quarantining together, so she actually made this dinner! (How nice!) We think you will enjoy this recipe!

Spinach Walnut Pasta
Yield:  4 servings

Ingredients:
  • One bag spinach
  • 1/2 cup chopped walnuts
  • 8-ounce box of gluten free penne pasta (or brown rice pasta)
  • 3 cloves garlic
  • Extra virgin olive oil 
  • Shaved Parmesan cheese (Or Follow Your Heart Vegan Parmesan shreds.)
  • 1 package Organic Italian sausage, mild (Optional, if you want to add a meat to the pasta.)
Directions:
  1. Chop garlic cloves and pan sear in olive oil using a large pan.
  2. Cook pasta according to the directions on the box in a separate pot.
  3. While pasta is boiling, add walnuts to the garlic.  Stir to brown.
  4. Add the bag of spinach and more olive oil to the garlic. Continue to stir.
  5. Drain pasta and stir into spinach and walnut mixture.
  6. Salt and pepper to taste.
  7. Serve and top with Parmesan cheese.
Note:  If you add sausage to the dish, cook the sausage on the stove according to package directions.  My sister then cut it into rounds and browned the rounds on each side.  Add the sausage to the spinach and walnut mixture.  We found that it added a lot of flavor to the pasta.

As you can see from the photo, the pasta turns out beautiful, as well as tasty.  You will not have to add too much salt to the dish because of the shaved Parmesan and sausage.  We will definitely be making this pasta again soon!  Thanks, Paul and Judy!
