Grilled (or Broiled) Chicken Parmesan is a twist on regular chicken parmesan. First of all, the chicken does not need to be grilled, it can be broiled. I wanted to state that upfront just in case your weather is changing and grilling is out of the question. It is a great dinner to put together quickly during the week or to make for weekend eating. Either way, I think you will love it! I got this recipe from Courtney Holsworth who writes the A Life From Scratch blog. Courtney received the recipe from a friend of hers.
Grilled (or Broiled) Chicken Parmesan
Ingredients:
- 2 packages chicken cutlets
- A few tablespoons of olive oil, if grilling
- Montreal steak seasoning (McCormick brand)
- One jar of your favorite marinara sauce
- One 8-ounce package of shredded mozzarella
Panko Breadcrumb Topping:
- 3 tablespoons melted butter
- 1 cup of panko breadcrumbs
- 1 tablespoon dried parsley
- 2 tablespoons grated Parmesan cheese
Instructions:
- Mix your chicken with olive oil and seasoning. Grill over medium high heat for 3-4 minutes per side. (If broiling the chicken, sprinkle the chicken with seasoning. Broil for 5 minutes or so per side.)
- Place some marinara in the bottom of a 9 x 13-in. baking dish. Top with your chicken and the rest of your sauce. Sprinkle with shredded mozzarella.
- In a small mixing bowl, mix together the melted butter, panko breadcrumbs, parsley, and Parmesan cheese.
- Sprinkle the mixture over the dish
- Bake at 350°F for 15 minutes or so until everything is warmed and bubbly.
As you can see, this dish turns out just beautifully. I love this recipe since the chicken is grilled or broiled. It adds a delicious flavor to the meal. Having the breadcrumb mix on the top of the dish instead of directly on the chicken is the twist with the recipe. I really loved it! I hope you will try Grilled (or Broiled) Chicken Parmesan. Enjoy!
