Spaghetti Squash with Michael’s Sauce

Spaghetti squash is on the menu today. It is a great fall vegetable that is easily found now in the grocery store. Top it with one of my favorites, Michael’s Sauce (a ground turkey-based red sauce) and you have a delicious meal.

Spaghetti Squash with Michael’s Sauce—Makes 4 Servings

Ingredients:

  • 2 spaghetti squash  
  • 1 to 2 tablespoons of olive oil 
  • 1 teaspoon salt
  • 1 teaspoon freshly ground pepper

To make the spaghetti squash:

  1. Preheat the oven to 400° F. 
  2. Line a baking sheet with parchment paper or foil.
  3. Slice the spaghetti in half width-wise, right down the center. Scrape out the seeds (I like to use a grapefruit spoon for this) and place it on the baking sheet. Spritz or brush it with olive oil and sprinkle with salt and pepper.
  4. Roast the squash for 30 to 35 minutes, or until the strands scrape easily from the sides.
  5. While the squash is roasting, make Michael’s Sauce on the stove top.
Michael’s Sauce

Ingredients:
  • 2 tablespoons of olive oil
  • 1 to 1-1/2 pounds of ground turkey
  • 1 onion, chopped
  • 1 tablespoon garlic, minced
  • 1 bag of fresh spinach
  • 1 cup of spaghetti sauce
  • 2 teaspoons of Italian seasoning 
  • Salt to taste
  • Pepper to taste
  • Pinch of red pepper flakes
  • Shaved Parmesan, optional
To make Michael’s Sauce:
  1. Heat the olive oil over medium heat.  Add the chopped onion and cook until softened.  Add garlic. 
  2. While the onion is cooking, in a separate pan, brown the ground turkey.  Add the cooked ground turkey to the onion and garlic mixture.  
  3. Begin to add the spinach a few handfuls at a time to the turkey mixture until the spinach is wilted.  
  4. Add the spaghetti sauce and seasonings. 
  5. Simmer for 10 minutes or so until the sauce is heated.
Plating the recipe:
  1. Scrape the spaghetti squash from each half into a a separate bowl.
  2. Top each bowl with Michael’s Sauce, and shaved Parmesan, if desired.
