Spaghetti squash is on the menu today. It is a great fall vegetable that is easily found now in the grocery store. Top it with one of my favorites, Michael’s Sauce (a ground turkey-based red sauce) and you have a delicious meal.
Spaghetti Squash with Michael’s Sauce—Makes 4 Servings
Ingredients:
- 2 spaghetti squash
- 1 to 2 tablespoons of olive oil
- 1 teaspoon salt
- 1 teaspoon freshly ground pepper
To make the spaghetti squash:
- Preheat the oven to 400° F.
- Line a baking sheet with parchment paper or foil.
- Slice the spaghetti in half width-wise, right down the center. Scrape out the seeds (I like to use a grapefruit spoon for this) and place it on the baking sheet. Spritz or brush it with olive oil and sprinkle with salt and pepper.
- Roast the squash for 30 to 35 minutes, or until the strands scrape easily from the sides.
- While the squash is roasting, make Michael’s Sauce on the stove top.
Michael’s Sauce
Ingredients:
- 2 tablespoons of olive oil
- 1 to 1-1/2 pounds of ground turkey
- 1 onion, chopped
- 1 tablespoon garlic, minced
- 1 bag of fresh spinach
- 1 cup of spaghetti sauce
- 2 teaspoons of Italian seasoning
- Salt to taste
- Pepper to taste
- Pinch of red pepper flakes
- Shaved Parmesan, optional
To make Michael’s Sauce:
- Heat the olive oil over medium heat. Add the chopped onion and cook until softened. Add garlic.
- While the onion is cooking, in a separate pan, brown the ground turkey. Add the cooked ground turkey to the onion and garlic mixture.
- Begin to add the spinach a few handfuls at a time to the turkey mixture until the spinach is wilted.
- Add the spaghetti sauce and seasonings.
- Simmer for 10 minutes or so until the sauce is heated.
Plating the recipe:
- Scrape the spaghetti squash from each half into a a separate bowl.
- Top each bowl with Michael’s Sauce, and shaved Parmesan, if desired.
