This arugula salad is just what the name says—simple. It is a perfect salad for a meal if you add chicken or shrimp. It is also a wonderful side salad to accompany a heavier meal to get your veggies in for the day. This salad is from Courtney Holsworth at A Life From Scratch.
Simple Arugula Salad
Serving: 2 main salads or 4 side salads
Ingredients:
- 5 oz. of arugula
- 1/3 cup of olive oil
- 1/2 of a large lemon or 1 medium lemon
- Salt
- Shaved Parmesan for topping (You can use Follow Your Heart Parmesan for a dairy-free option)
Instructions:
- Place the arugula in a large bowl.
- Tear the arugula into bite-size pieces.
- Pour olive oil on the arugula and toss. (It should wilt a bit.)
- Squeeze lemon onto the arugula and toss.
- Salt the arugula and toss.
- Plate each salad and top with Parmesan cheese.
I love this salad. It is simple and tastes so fresh and clean. I didn’t add pepper since arugula is peppery, but you can if you desire. If you add too much lemon, just add a little more olive oil to balance the flavors. I hope you enjoy Simple Arugula Salad!
