I have always wanted to make smashed potatoes. So, I finally did. It is basically a two-step cooking process, and the result is amazingly delicious! It is also a fun dish to make.
Smashed Potatoes
Ingredients:
- Small potatoes (my bag had 11 potatoes)
- Salt
- Pepper
- Garlic powder
- Olive oil
- Melted butter (amount depends on how many potatoes you have)
- Parsley (fresh or dried) as a garnish
Directions:
- Preheat oven to 450°F.
- Boil potatoes in salted water (roughly 1 tablespoon of salt) for 15-20 minutes or until they are fork-tender.
- Drain the potatoes in a colander for five minutes.
- Prepare a baking sheet with olive oil. Place the potatoes on the baking sheet and smash them with the bottom of a glass until they are flattened. Try not to break the potato into pieces.
- Let the potatoes sit for five minutes.
- Drizzle the potatoes with melted butter and then olive oil. (You can only use olive oil, if you wish.)
- Season the potatoes with salt, pepper and garlic powder.
- Bake in oven for 25-30 minutes, or until they are golden brown. (Do not flip the potatoes.)
- Garnish with parsley and serve.
These smashed potatoes are delicious! I served mine with fat free Greek yogurt. There are many variations on smashed potatoes and dipping sauces, too. They are a terrific side dish. I hope you will try them! Enjoy!
