Broiled Salmon with Asparagus and Lime-Butter Sauce from Publix Aprons

Publix is my go-to grocery store in Orlando, Florida.  It is literally 3 minutes from my home.  Talk about convenient!  Publix grocery stores are located in six states in the southeast:  Florida, Georgia, Alabama, Tennessee, South Carolina, North Carolina, and Virginia.  Each week their flyer contains a recipe that is featured in the stores.  They actually cook the food, give out samples, have the ingredients conveniently placed near the samples, and have a printed recipe on card stock, hole-punched and ready to go into a recipe notebook.  What more could you ask for?  Actually, one of my neighbors does some of the cooking at the store, so I often go in and chat with her. 

Last week's Publix Aprons recipe was Broiled Salmon with Asparagus and Lime-Butter Sauce.  (Click on the link for all Publix Aprons recipes.) I have been trying to include more omega-3's in my diet, so I felt this was a perfect recipe to continue that trend.  It takes 10 minutes to prepare the salmon, and 10 additional minutes to make the sauce and complete the salmon.  So here is a great dinner in 20 minutes!!

Ingredients:

  • 1 lime for zest/juice
  • 2 salmon fillets (about 12 oz.), skin removed
  • 3/4 teaspoon sriracha seasoning, divided
  • 8 oz. fresh asparagus tips
  • Cooking spray
  • 1 (12-oz) package frozen cauliflower rice medley (I used Green Giant.)
  • 3 tablespoons salted butter
  • 1 teaspoon minced garlic
  • 1 teaspoon honey (I substituted 1/2 teaspoon Truvia nectar.)
Instructions:

  • Preheat oven on broil. Line baking sheet with foil.  Zest lime (1 teaspoon); squeeze for juice (1 tablespoon).  Coast salmon with 1/2 teaspoon seasoning and zest (wash hands).
  • Coat salmon and asparagus with spray; arrange in a single layer on baking sheet, then broil on center rack for 6 minutes.  Move baking sheet ot top rack; broil 1-2 more minutes or until vegetables are tender and salmon is 145°F.
  • Meanwhile, microwave cauliflower rice following package instructions.  (Note:  It takes 6 minutes in my microwave, so it works out perfectly while the salmon is on the center rack.)  Melt butter.  Place juice, garlic, honey, and remaining 1/4 teaspoon seasoning in blender (or food processor); slowly pour in butter while blender is running, until sauce forms.  Serve salmon over cauliflower rice and asparagus, top with sauce.
Just delicious!
Publix Aprons suggest that if you don't care for salmon, your could use a flaky white fish or chicken cutlets to complete the recipe.  I love the way the salmon tastes out of the broiler.  The sauce is delicious, and you can always cut back on the sriracha if you are concerned about the spiciness of the salmon.  I hope you enjoy this delicious and healthy dinner.
