Trader Joe's Cauliflower Gnocchi and Roasted Vegetables with Salmon

Oh my gosh!  This is the best recipe!  Jessica Merchant of How Sweet Eats has done it again!  Her sheet pan gnocchi and roasted vegetables is absolutely delicious!  I made two substitutions and added salmon to the sheet pan. 

Ingredients:

  • 1-16 ounce package uncooked potato gnocchi (I used Trader Joe's Cauliflower Gnocchi.  See #5 of instructions.)
  • 1 pint grape tomatoes
  • 1 red bell pepper, chopped
  • 1 orange bell pepper, chopped
  • 1/2 red onion, chopped
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 pinch crushed red pepper
  • 1/4 cup freshly shaved Parmesan cheese, for topping (I used Follow Your Heart Parmesan Style Dairy Free Shredded Cheese Alternative--It is also vegan and gluten free.)
  • Sprinkle of fresh herbs (I used basil.)

Instructions:

1.  Preheat your oven to 425°F.  Line a baking sheet with aluminum foil and spray with nonstick spray.

2.  Spread the gnocchi, tomatoes, peppers, and onions on the baking sheet.  Add two salmon fillets in the center of the gnocchi and vegetables.  Drizzle everything with the olive oil. Sprinkle the garlic powder, salt, pepper, oregano, basil and crushed red pepper and toss well to combine. (As I was adding the spices, I sprinkled them over the salmon fillets, too.)  Make sure everything, especially the gnocchi, is seasoned well.

3.  Roast for 20-25 minutes, tossing once during cook time.  You want the tomatoes to be bursting and the peppers to be soft and caramely.  

4.  Serve the gnocchi and vegetables with salmon immediately.  Sprinkle the vegetables with Parmesan cheese and a sprinkling of fresh herbs.  

5.  To make this with Trader Joe's cauliflower gnocchi, be sure your pan has nonstick spray on it and that the gnocchi are not clumped together.  You do not need to defrost the gnocchi, but make sure any large pieces of ice or freezer burn are removed.  I roast for about 25 to 30 minutes with the TJ's cauliflower gnocchi.  The outside may not get quite as crisp and tasty as potato gnocchi.   Note:  These directions for using Trader Joe's cauliflower gnocchi are from Jessica.  I followed the directions exactly the way she wrote them, and the cauliflower gnocchi turned out beautifully. Also the 25-30 minute time was perfect for the salmon.
