Feta Cheeseball adapted from The Pretty Dish

What better time to make a cheeseball, especially a feta cheeseball!  Jessica Merchant, author of The    Pretty Dish selected this recipe as one of the May recipes of the month in her Facebook group called “The Pretty Dish Book Club!”  With summer approaching, the feta cheeseball would be the perfect addition to any type of indoor or outdoor entertaining you may have planned.  In addition, it would be a fabulous appetizer to serve for a fun Happy Hour with friends or with your significant other.

Feta Cheeseball (Makes 8 Servings)

Ingredients:
  • 6 ounces feta cheese, crumbled (Note: I do eat Feta cheese.)
  • 1 package (8 oz,) cream cheese (Note: I used Follow Your Heart Vegan Gourmet Cream Cheese)
  • 1 clove garlic, minced
  • 1/4 cup chopped kalamata olives (Note: I splurged and used the olives, even though they were packed in vinegar.)
  • 2 tablespoons chopped roasted red peppers
  • 2 tablespoons chopped artichoke hearts
  • Pinch of salt
  • Pinch of ground black pepper 
  • 1/2 cup finely chopped marcona almonds  (Note:  I did not use the almonds.)
  • Crackers, pita chips and veggies for serving (Note:  See below for what I served with the feta cheeseball.)
Instructions:
  • Place the feta in a food processor and pulse into small crumbs.  Transfer to a large bowl. Add the cream cheese, garlic, olives, red peppers, artichokes, salt, and black pepper and stir until combined.
  • Mold the mixture into a big ball as best you can.  Roll it in plastic wrap and refrigerate for 30 minutes.
  • After 30 minutes, mold the cheese into a smoother ball.  Spread the almonds on a plate or baking sheet and roll the ball through them, using your hands to press them into all the cracks and crevices. (Note:  I did not do this step.)
  • Serve immediately or keep it in the fridge until ready to use.  The cheeseball can be made 1 to 2 days beforehand, wrapped in plastic, and stored in the fridge.
Oh my!
This feta cheeseball is so tasty!  All of the flavors blend together so well.  As you can see, I served the feta cheeseball with olives, cucumbers, and two types of crackers. I used Simple Mills Sea Salt and Rosemary & Sea Salt Almond Flour Crackers.  They are gluten and dairy free.  Best of all they are absolutely delicious!  I hope you make the feta cheeseball.  Enjoy!
