I have been cooking quite a bit with mangoes this summer. They are so flavorful and add beautiful color to salads and salsas. I found this recipe on the 21-Day Vegan app. The app is free and I highly recommend it to find recipes to incorporate more plant-based meals into your diet.
Ingredients:
- 1 bunch or bag of fresh spinach
- 1 mango, peeled and cut into bite-size pieces
- 1 large cucumber, peeled and sliced
- 6 green onions, thinly sliced
- 1/2 cup fresh basil, chopped
- 1 lime, juiced
- 1/2 cup seasoned rice vinegar (You could leave off the vinegar and dress the salad with olive oil.)
- 1/8 teaspoon ground black pepper
Directions:
- Wash and drain spinach, tear into bite-size pieces, if necessary, and put into a large serving bowl.
- Toss mango, cucumber, green onions, and basil in a medium bowl. Add lime juice and vinegar and stir to mix.
- Arrange mango mixture on spinach and sprinkle with black pepper.
