Sweet Potato Fries


I have wanted to make these Sweet Potato Fries from Jessica Merchant's blog, How Sweet Eats for a long time.  I finally decided to try a Beyond Burger, a plant-based burger, with some yummy sides.  I will write more about plant-based burgers next week.  The sweet potato fries were such a great side dish for this dinner.

Sweet Potato Fries--Serves 2-3

Ingredients:
  • 2 large sweet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons brown sugar
Instructions:
  • Preheat oven to 425 degrees.
  • If desired, peel sweet potatoes.  (I did.)  Begin cutting potatoes into wedges.  They can be cut in half.  Then continue to cut in half until you get the wedge size you wish.
  • Add potatoes to a bowl, and combine with olive oil, salt, pepper, paprika, and brown sugar.  Mix thoroughly with your hands so every wedge is covered.
  • Set a wire rack on a baking sheet and spray with non-stick spray.  Lay wedges on the wire rack.  Bake for 25 minutes, then check to see if the potatoes are close to where you'd like them.  You can rotate the pan at this time and put them back in for 15 minutes.  They may also need an additional 5-10 after that.


Sweet Potato Fries


I really loved the sweet potato fries.  I need to make them more often.  The seasoning is great and the technique to bake them made them crisp.  I hope you will try these sweet potato fries!
