Blueberry Peach Cobbler Bars--GF & Yeast Free


Summer is such a fun time to cook and bake.  This recipe from Jessica Merchant's cookbook, The Pretty Dish, includes this super delicious recipe for Blueberry Peach Cobbler Bars.  Peaches and blueberries are in season now, so this recipe would be a fantastic way to use them.  I have adapted the recipe to be gluten and yeast free.

Blueberry Peach Cobbler Bars--Makes 16

Ingredients:

Crust and Topping
  • 3 cups all-purpose flour  (I used King Arthur gluten free baking mix.)
  • 1 cup granulated sugar (I used 1/2 cup Truvia Cane Sugar Blend.)
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
Filling
  • 3 large eggs
  • 1/3 cup half-and-half  (You can use any non-dairy creamer such as those made by Silk.)
  • 1 cup firmly packed brown sugar (I used 1/2 cup Truvia Brown Sugar Blend.)
  • 1 tablespoon cornstarch (I used Rumford brand, a non-GMO, gluten-free cornstarch.)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 2 cups fresh blueberries
  • 1 cup chopped fresh peaches
Instructions:


Preheat the oven to 350 degrees F.  Spray a 13" x 9" baking dish with cooking spray.

To Make The Crust And Topping

In a large bowl, sitr together the flour, granulated sugar, and salt.  Add the butter and stir until a shortbread-like dough comes together.  Press half of the dough into the bottom of the baking dish.

To Make The Filling

In another bowl, whisk together the eggs, half-and-half, brown sugar, cornstarch, vanilla, cinnamon, and salt.  Gently fold in the blueberries and peaches.

Pour the mixture over the crust and spread evenly.  Crumble the rest of the dough over the blueberry mixture.  Bake for 40 to 45 minutes, or until the bars are set and no longer jiggly.  Cool completely before slicing into squares.

This recipe is so simple to make, and the end product is absolutely delightful.  This is a perfect treat for your family.  It is also a stellar recipe to take to a summer party.  The bars can easily be made the night before and then packed up for the next day.  Enjoy!!
