Fig, Goat Cheese & Caramelized Onion Flatbread


This Fig, Goat Cheese & Caramelized Onion Flatbread is such a beautiful combination of sweet and savory.  I love this flatbread!  I have had appetizers similar to this at restaurants.  Some add prosciutto or bacon and use ricotta instead of goat cheese.  There are a number of ways one can make a similar flatbread.  But this one has all of the ingredients to make it gluten and yeast free.  


Fig, Goat Cheese and Caramelized Onion Flatbread--Makes two 7" circular flatbreads

Ingredients:
  • Simple Mills Artisan Bread Almond Flour Mix (2 eggs, 2 tablespoons water, 4 tablespoons olive oil and 2 tablespoons apple cider vinegar)
  • 1 tablespoon rosemary
  • 1 onion, sliced into thin strips
  • 1 teaspoon olive oil
  • 1 teaspoon butter
  • Salt
  • 8 oz. goat cheese (I used herbed goat cheese.)
  • 6 ripe brown turkey figs
  • 1 cup arugula
  • Balsamic glaze, drizzled on cooked flatbread (I used Bertolli Balsamic Glaze.  It is not on the Candida diet, but I used just a small amount.)
Directions:
  • Preheat oven to 350 degrees F.
  • Make the flatbreads as directed on the back of the Simple Mills package.  Sprinkle the rosemary over the flatbread and push the rosemary into the dough.  Set them aside. 
  • To caramelize the onions, add the olive oil and butter to a pan at medium high heat.  When the oil/butter is hot, add the sliced onions.  Coat the onions with the oil/butter mixture.  Let them cook, stirring occasionally.  You may need to turn down the heat to prevent the onions from burning.  After about 5-7 minutes and the onions have some color, sprinkle salt on the onions.  Continue to cook for about 5 minutes, or until the onions smell sweet and have a dark brown color.
  • Next cut the figs into small pieces or slices and place them on the flatbread dough.  Crumble almost all of the goat cheese evenly over the dough (reserve 1-2 oz. for finishing).  Top with the caramelized onions.  
  • Bake the flatbread for 20 minutes. 
  • One the flatbread is cooked, top with arugula and crumble the remaining goat cheese over the flatbread.  Drizzle with balsamic glaze.
