Super Bowl Sunday Recipes—Perfect for 49ers vs. KC!

Are you ready for some football?  I hope so because the San Francisco 49ers are playing the Kansas City Chiefs in the Super Bowl this Sunday!  Super Bowl LIV will be held in Miami this year and hopefully will prove to be an exciting matchup.  

So what is on your menu for Super Bowl Sunday?  On my menu are two recipes that are specialties from each of these Super Bowl cities.  What is better than a bowl of Fisherman’s Wharf Clam Chowder and Kansas City Style Pork Ribs?  Place them on a cute football party tray with the goal posts at either end, and you are set for the night!

Fisherman’s Wharf Clam Chowder

Ingredients:
  • 1 small onion, chopped
  • 1 celery stalk, chopped
  • 2 (6-1/2 ounce) cans chopped clams, undrained
  • 1 (8-ounce) bottle clam juice
  • 1-3/4 cup chicken broth
  • 1 large potato, peeled and diced
  • 1/8 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons cornstarch
  • 2 cups (1 pint) heavy cream (I used Silk Soy Creamer, but any non-dairy unflavored cream will work.)
Directions:
  1. In a soup pot over medium heat, sauté onion and celery 3 to 5 minutes, or until tender. Add clams, clam juice, chicken broth, potato, thyme, salt, and pepper; cover and bring to a boil.
  2. Reduce heat to medium, and cook, covered, 12 to 15 minutes, or until potatoes are tender. In a bowl, dissolve cornstarch in cream, add to soup.
  3. Cook 5 minutes, or until thickened, stirring frequently.

Kansas City Style Pork Ribs

Total Time:  1 day 4 hr 15 min
Prep:  15 min
Inactive: 1 day
Cook:  4 hr

Ingredients:
  • 2 slabs pork spareribs, 3 pounds each
  • Kansas City barbecue sauce, recipe follows
Dry Rub:
  • 2 cups brown sugar (I substituted 1 cup Truvia Brown Sugar Blend.)
  • 1/2 cup dry mustard
  • 1 tablespoon cayenne pepper
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon salt
  • 2 teaspoons freshly ground black pepper
Kansas City Barbeque Sauce:
  • 2 tablespoons vegetable oil
  • 1 (about 2/3 cup) small onion, finely diced
  • 3 cups water
  • 1 cup [2 (6-ounce) cans] tomato paste
  • 1/2 cup brown sugar (I used 1/4 cup Truvia Brown Sugar Blend)
  • 2/3 cup apple cider vinegar
  • 1/4 cup molasses
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
Directions:
  1. Remove the thin white membrane off of the bone-side of the ribs. Mix together the brown sugar, dry mustard, cayenne, paprika, garlic powder, onion powder, salt and pepper and a small bowl. Massage the rub into the ribs and let sit for one hour or up to overnight.  (I let mine sit overnight.)
  2. If cooking on the grill, place the ribs meat-side down next to the medium-hot coals that are about 225°F. The indirect heat will cook them slower, making them tender. Allow to cook for 1 hour. Turn ribs every half hour and baste with the Kansas City Barbeque Sauce. Cook until the ribs are tender, about 3 to 4 hours.
  3. If cooking indoors, place in a roasting pan with a rack. Slather the ribs with the Kansas City Barbeque Sauce and tent a piece of aluminum foil over them. In a preheated 350°F oven, place the ribs, basting with the sauce every 30 minutes and removing the foil for the last 30 minutes and cooking until fork tender, about 2 1/2 to 3 hours.
Kansas City Barbeque Sauce:
  1. In a small sauce pot on medium-high heat, heat the oil and add the onion, cooking until translucent.
  2. Add the remaining ingredients in a large bowl and mix together. Add to sauce pan and let simmer for 30 to 45 minutes. Used to baste the pork spare ribs.
  3. Yield: 3 cups

These recipes are so delicious!  You could serve the clam chowder in sourdough bread bowls for your guests that can have yeast.  However, I found these cute Bowls at Party City that are the perfect size for soup and have the football theme.  I also purchased the Football party tray at Party City, too!  The tray is so cute!  It has the football field with the audience in the stadium around the field.  The goal posts I purchased at my local Dollar Tree in the toy section.
