WW Baked Chicken with Lemon and Fresh Herbs

This lemon chicken recipe is a winner!!  The fresh herbs add so much flavor.  Plus, if you are on the WW Purple Plan, one serving is zero points!! Yay!!

Baked Chicken with Lemon and Fresh Herbs
Serves 4   

Ingredients:
  • 4 sprays, cooking spray
  • 1 pound (four 4-ounce halves) uncooked boneless skinless chicken breasts
  • 1/2 teaspoon table salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon olive oil
  • 2 teaspoons (or more to taste) fresh lemon juice
  • 2 teaspoons fresh rosemary, chopped 
  • 2 teaspoons fresh parsley, chopped
  • 1/4 cup reduced-sodium chicken broth
  • 1/2 medium lemon, quartered (for garnish)
Directions:
  1. Preheat oven to 400°F. Coat a small, shallow roasting pan with cooking spray.
  2. Season both sides of chicken with salt and pepper. Transfer chicken to prepared pan and drizzle with oil; sprinkle with lemon juice, rosemary and parsley. Pour broth around chicken to coat bottom of pan.
  3. Bake until  chicken is cooked through, about 30 to 35 minutes. Garnish with fresh lemon and serve.
  4. Serving size: 1 chicken breast half

This recipe could be paired nicely with a baked potato and cooked spinach.  It would also go well with riced cauliflower and roasted broccoli.  In addition, WW said that this flavor combination would pair well with turkey cutlets or white fish fillets.  There are many options for such a simple and delightful recipe.  Enjoy!!
