28 Summers by Elin Hilderbrand—A Review with a Recipe!

I absolutely loved 28 Summers by Elin Hilderbrand. I have to say that it is now my favorite book by the author. 28 Summers is set in Nantucket, of course, in a cottage on the beach. Main character, Mallory Blessing, inherits the cottage from her Aunt Greta. On Labor Day weekend 1993, Mallory is hosting a bachelor weekend for her brother, Cooper, and his buddies to celebrate his upcoming marriage. Things don’t go as planned, and the weekend ends up being a disaster. The only ray of sunshine is that Jake McCloud, Cooper’s best man, ends up staying with Mallory the whole weekend. This is when they decide to have a “same time next year” every Labor Day, no matter what. Mallory Blessing is the type of character that becomes your best friend. I was so fortunate to watch Good Morning America on January 14th to see Kristin Cavallari make her White Chicken Chili . I decided to make it, and it is delicious! It is so delicious that I purchased her new cookbook, True Comfort , so I can make more of her recipes. True Comfort contains more than 100 recipes free of gluten and refined sugar. What a great way to start the new year! White Chicken Chili with Salsa Verde Serves: 8 Prep Time: 50 minutes Cook Time: 1 hour 15 minutes Total Time: 2 hours 5 minutes Ingredients : 1 tablespoon avocado oil 2 pounds skinless, boneless chicken thighs, cut into 1/2-inch pieces (I used 2 pounds of chicken tenderloins, cut into 1/2-inch pieces.) 2 small poblano chiles, seeds removed chopped (I left them out of the chili.) 1 small white onion, chopped 1 jalapeño, seeds removed, diced (I used 1/2 of a jalapeño.) 2 teaspoons chopped garlic 2 teaspoons ground cumin 1 teaspoon smoked paprika 1/2 teaspoon dried oregano 1/4 tea...

Rachael Kirkconnell’s TikTok Salad

I had to try the latest salad trend all over Instagram and TikTok. Rachael Kirkconnell, from The Bachelor , made this salad that can be a snack or a meal. I had it for lunch twice so far, and I love it! Here is the recipe: Rachel Kirkconnell’s TikTok Salad Ingredients: 2-3 sliced mini cucumbers 4-5 sliced mini sweet peppers 1 tablespoon ginger dressing 1 teaspoon chili crunch 1 teaspoon Everything but the Bagel seasoning Instructions: 1. Place mini cucumbers, mini sweet peppers, dressing and chili crunch in a bowl. Stir together so all veggies are covered with the dressing and chili crunch. 2. Top with Everything but the Bagel seasoning. As you can see, this is a quick and easy salad to make, I used Makoto ginger dressing and Momofuko Chili Crunch. (Note: Rachael mentioned you can use Trader Joe’s Onion Crunch in place of chili crunch.)
