Do you have an abundance of avocados? Here is a great salad that uses avocados, homemade salsa (link in recipe), lettuce, and dark red kidney beans. Black beans would go great with this recipe, too!! It is the go-to salad that my sister, Glenna, always makes. I hope you enjoy Fiesta in a Bowl!!

Fiesta in a Bowl Serves 2
Ingredients:
- 4 cups shredded iceberg lettuce
- 1 avocado
- 1-15 ounce can of dark red kidney beans
- Salsa (Recipe linked below.)
- Salt to taste
- Pepper to taste
Directions:
- Place two cups of lettuce into two serving bowls.
- Dice the avocado, and place half into each bowl.
- Open the can of beans. Place half of them on top of the lettuce and avocado in each bowl.
- Top with salsa.
- Add salt and pepper to taste.
Serve with tortilla chips!
